Blackberry Pork Chops

  • 2 tbs Chilli Powder
  • 1 tsp Cayenne Pepper 
  • 2tsp Sea Salt
  • ½ tsp Black Pepper
  • 4 Seaview Farm Pork Chops
  • 2 tbs Olive Oil
  • ½ diced onion
  • ½ cup Red Wine
  • 4 cups Fresh Wild Blackberries 
  • ½ cup Homemade Chicken Stock
  • 2 tbs Local Honey
  • 2 tbs Unsalted Butter 


  1. Marinade Chops with rub- Chilli Powder, Cayenne, Salt and Pepper 
  2. Heat Olive Oil in heavy based skillet on medium-heat. Brown both sides of the chops. Cover the pan and reduce the heat and cook for 5-7 minutes; remove chops from and keep warm. 
  3. In the same pan Sauté the onion over medium heat until soft. Deglaze pan with the wine and scrape any browned bits for extra flavour. 
  4. Add 3 cups of the berries, chicken stock and honey. Bring to boil and simmer for 3 minutes, gently mash the berries then simmer the sauce over low heat until it’s slightly thick. 
  5. Stir in remaining berries and cook until heated through; remove from heat and stir in the butter. Season with quality salt and pepper to taste. Add Seaview Farm’s Chops back to the pan and serve with your favourite potato dish.
